I've read all the "sensor bar" is is a set of IR LEDs but if that's the case, how does the remote work? Blutooth?

yeah, its a bluetooth remote. the front of the remote acts like an ir sensor, its kinda strange, my parents have a wii, but they have to turn the lights on their ceiling fan off to play or they get weird remote interference.

http://en.wikipedia.org/wiki/Wii_Remote has a good amount of in depth data

The front of the remote hosts a low resolution IR camera, a triple axis accelerometer and a bluetooth transciever. And you can connect the wiimotes to your computer!

The entire purpose of the IR bar is so the remote only works when faced directly at your TV. It kind of gives the remote a reference point so that the cursor or whatever on the screen moves in a way that makes sense with how you're moving the remote.

You can use other IR sources. Candles work just as well! Just don't burn your house down. Would be neat to mod a sensor bar into the top of a televison.
