Okay, there are a lot of modding things I can do, but for some reason, wiring from scratch always just escapes me - so please bear with me and be gentle. :)

For a project I am working on, I'd like to be able to wire for LEDs up to a USB connector. I have some tailed LEDs (http://www.frozencpu.com/products/7721/ele-347/Dual_5mm_LEDs_w_Tailed_Standard_4_Pin_Connector_-_Blue.html) with resisters and such built in that I would like to use...now, can I just use a regular USB cable, clip the end, cap the data and one ground line and then just hook up the 5v and ground lines to the corresponding wires on the LEDs (nipping off the molex, of course.)

yes, but you'll have to add a resistor in line depending on what led you use.

Okay, thanks - that's what I thought. Just needed some confirmation. As stated in my OP, the LEDs linked are already resisted, so I should be good to go. Excellent.
