How can I best make a rattle-can paintjob look like a pro paint job?...
... I know a guy that paints cars for car shows that can do it, but I don't want to spend the money.

Short answer"
several THIN layers of primer (wet/dry sand between coats
then 4-6 THIN coats of paint (wet/dry 1000 grit between every other coat)
then same for clear coat.
then 2000 wet dry clear coat.
*Expect all this to take days the paint has to dry for 8 hours between coats (unles you bake it)
polish and buff it.
wait 1 month.
wax it.
MnPCTech.com (http://www.mnpctech.com/case-mod-paint-computer-pc-case-mod-how-to.html) has a good worklog on painting a mirror finish.
indeed he is right, other than that, follow the directions on the can 6"-12" light mist, dont stop moving, make exxagerated passes.

When I was painting my bike i went 5 coats of primer and then 7 coats of paint. For finish I just used indoor wood and metal laquer. It says wood only but it works fine. Also try theses 2:
