I want to build a computer into a unusual case and need to know how tall mini itx boards are when installed. I need the height with all components installed to see if it can fit or not.

That depends on the components - you can get low profile coolers and RAM, and if you aren't using a dedicated graphics card you could realistically get a full PC in a space less that 2 inches high - I have two ITX systems, one of which is about 1.8 inches high, the other is nearly 5 inches because I have a large cooler installed....

You'll have to use a low profile card or get a riser card for a full size GPU.

The issue with riser cards is that they will often put your card over other components, especially in mini-itx situations, so you have to plan much more carefully. But in either case you should be able to get it in under three inches.

^Unless you're going for slim, but wide. Probably not, but at least that way, you're not blocking airflow as bad.

Yeah, the low profile card alone will keep you under 3" tall, but a riser card is guaranteed to make your final build look something like a large dinner plate, or serving dish. It will get big in the other dimensions.
