Umm...???
You need a video decoder card for your computer to capture analogue signals. I'm 99% certain that what you're trying to accomplish is impossible without other hardware. It sounds like you're trying to plug the hoover into the gas main, and you can't figure out why it doesn't work.
Look up a video decoder card. They're cheap at the mo because media center PC's are becoming more popular.

Exactly. You'll need a video capture card and applicable software. Basically what you'll be doing is playing the console game with the video output from the console going into the video capture card in your PC. This will display on your monitor. From there, you can record the game play.

S-video is more of a direct ( one way ) connection, whereas USB is two-way transfer. You would just be pumping info through the D+ and D-. It might be possible to find software, but I doubt it.

lol, you have no idea what you're doing. The USB cable is designed to work with a USB codec to provide power to a device using 2 of it's cables (5v+, 5v-) and then two data cables (data+, data-) to send data to your computer. Hooking up an S-Video cable to it wouldn't have any effect because only 2 of those cables would be sending the data to the computer, and even then you wouldn't get a complete image IF the computer could possibly recognize the streams (it wouldn't).
Buy a capture card, it does what you need
