I believe one issue of MAKE magazine had a short article about someone doing this. I may be wrong though.
A tablet would probably be easiest, and wouldn't require a keyboard.

If you REALY want to do this, i can help, seeing as i work with in car computer systems for the local police, Ambo's and fire crews.
My advice is to put it in the boot. There is lots of space, and heaps of places to mount items securley. Youll need a decent touch screen for up front, no keyboards please, they only get in the way.
As for the computer, its your choice. What do you want it to do? MP3's? DVD's? GPS? These are just some of the posibilities. Do you want this system to replace you in car radio set up? If so youll need a very good sound card. And maby an AM FM card to pick up your local stations.
Then, your last concern...... the mighty hard drive. This is alwsys a problem, seeing as cars like to bounce around a whole lot, yet HD's dont. Infact, they hate it. Youll need to make a a "gimbal" device to seperate the movement of the car fromt he disk. Not easy.... but it can be done with lots of rubber.
