How do you take out rivets? Like if you wanted to take apart a case. I don't really know much about rivets.

I used a big ass chisel and a hammer. That did the job right quick

While on this topic, how do you replace rivets? Would it be better to replace them with rivets again or can you switch to screws?

i love rivets, theyre so easy to work with and apply.
if you know something is going to have a lot of stress on it though...then i would suggest moving to screws...but really involving a compy case, rivets are just fine.
Haha, I = DUMB
There is a whole long post about just this already in existance

Screws can work but the case vibrations will make them lose over time, stick with rivets because they are quick, easy and will save you lots of hassle in the long run.
