Google can give you special powers. I put this in the search box: "baybus toggle switch 6"

While look at the reviews for that product from some customers. One customer complained about burnt out led's after 6 months. Probally only connected 2 things. Not drawing that much current.
So make sure if you are going to buy this product and only going to use 1-3 sections, I know you want a 6 for a reason) just be sure to put a small resistance in there.

Yes.
One simple method would be to take all the ground wires from all of your lights, and connect them to one switch on your bus.
That way there is no power running through you bay bus, I do not know if this will effect the led in any manner. By that I mean I don't know if the led's take power from the device, or the molex connector once switched to the "on" position.
So just tie all the ground wires onto one wire. 18-24 guage, perferably a little thinker (18-20 range), then cut than one wire into half and feed one end through.
I made a sketch on Paint, sorry I'm at work and the military comps have only paint.

In what aspect
Lighting or Fans.
Light rheostats are generally used with incondescent bulbs. I have never "dimmed" a led before, never tried.
Fan would be easy, it would actually have to be a potentiometer, LINK (http://cgi.ebay.ca/6pcs-4-7K-10K-47K-5-precision-potentiometer-each-2-pcs_W0QQitemZ230178372777QQihZ013QQcategoryZ58164Q QssPageNameZWDVWQQrdZ1QQcmdZViewItem)
