I finally broke down and bought an 8800GT today. :D Problem is, the specs call for "A minimum 400W system power supply (with 12V current rating of 26A)". My system has two 400W PSU's but neither of them has a 26-amp 12-volt rating. They are rated at 18 amps. The card came with an adaptor that combines two Molex plugs into a 6-pin PCIe plug. Can I use one Molex plug from each of my PSUs to power this thing? Will that in effect double the amperage going to the card, thereby satisfying this power-hungry beast?

Hmmm, I'm not sure lol. The system I built my brother is running a 8800GT of a 500W Cooler Master Extreme Power. I'm not sure of the wattage on the rails but if you take a look that should answer your question.
I think you should be fine with either method.

Remember, each PSU isn't going to output exactly 12V. So be careful about that. It would be a better idea to just bite the bullet and get a new PSU.

What risk am I running with voltage fluctuation between the PSUs? Will it damage the card or just not work?

I'm not 100% sure to what will happen. You can try it, but you may run the risk of damaging your card. It could be a better idea to put loading onto mostly one PSU and just run the card off the other.

That's what I will do first, use one PSU exclusively for the card. We will see......

the voltage will not be a problem, the amps are the issue. and psu's do put out 12v unless there overloaded or crappy ones.
i think i would try 1 psu to the card only and only the 1 psu powering it.

I currently have one PSU powering the card and the other powering everything else and it seems to be working fine. It looks like crap, but I'm sure that can be sorted out.
Incidentally, I upgraded from an 8500 GT and DAMN! :D

The 8800GT are great cards, I am tempted to trade my brother my 8800GTX for his GT and then get another one and run SLI lol.

i think if you started overclocking you might start to get stability issues.

Then I will make it a point not to do that. :D
Problem has been solved with the purchase of a Sigma Shark PSU anyway. Thanks for the input.
