The nickel blocks are nickel plated for cosmetic purposes. The thermal conductivity of copper is more than 3 times that of nickel; so there's no performance benefit.
The only real reason I can think of to plate the copper would because nickel oxidizes like aluminum and still looks clean and shiny, whereas copper starts looking dirty and, if you live in an area with high humidity, will start turning green after a while.

EDIT: I wouldn't think there would be a noticeable performance hit with plating either, so it really doesn't matter.
    I'll procrastinate tomorrow.

“Do not trust people like me. I will take you to museums, and parks, and monuments, and kiss you in every beautiful place, so that you can never go back to them without tasting me like blood in your mouth. I will destroy you in the most beautiful way possible, and when I leave you will finally understand why storms are named after people.”

EK's nickel still has issues, so if that's who you want I would recommend staying with copper.

I still prefer silver plated but I'm the only one doing that (both the plating itself and using the plated blocks) these days.
